This is, I think, what separates a great roaster from an incredible roaster. All roasters, us included, face these two basic issues, and no one is perfect. So, there's potentially both a consistency issue (did they hit the spot they wanted to) and a preference issue (what is the spot they are trying to hit) - not saying this as a dig at Sey at all. And then a tiny bit more, you lose a lot of the acidity and it becomes a bland bitter-sweet profile. A tiny bit more development and you get way more sweetness, still with nice bright acid. I do sometimes really enjoy a coffee with just a hair less development, as long as there are no real grassy green underdeveloped notes. I would say they prioritize acidity, whereas it sounds like your preference (which I share) is for a balance of acidity and sweetness. Then, when you go to do a pourover or batch brew, it's harder to get the sweetness and the coffees can come across as thin and sour. However, this comes at the expense of sweetness. Generally when we cup coffees of ours alongside coffees of theirs, I find theirs have slightly more electric acidity which makes them stand out on the cupping table, especially to third wave type people that really dig acidity. I think their coffees generally cup well, but are hard to brew well, because they demand extremely high extractions in order to get any sweetness. I have had some great coffees from them, but also others that I wasn't too impressed by. I would not be surprised at all to hear that you find the coffee underdeveloped. They do for sure roast as light as possible. Very curious if others have had similar experiences or if I'm basically the only specialty coffee lover who doesn't much enjoy Sey. I find it quite interesting that Sey has become so wildly popular given this fringe sort of approach to roasting. I've had Sey coffee brewed at various cafes before but never bought beans to brew myself. Also a pithy sort of bitterness that weighs on the tongue. Acidic to the point of being sour with muted sweetness and very little dimensionality. It's just so, so light that it's beyond the point of underdevelopment for me. Honestly, the coffees aren't bad, but they're easily my least favorite of the coffees I've had recently (Joe, Regalia, Parlor, Passenger, Metric). I've been brewing in the Kalita 185 with my Lido 3 using filtered NYC tap water (which is basically what Sey uses to profile). I did a Sey subscription order this month-received Burundi Gitwe Hill and Colombia Las Pulgas (Ivan Molano, a well-known specialty producer that I've had and loved before from Tandem).
